So, I gave myself a challenge to go through my recipes and find one that worked with this week’s Publix Italian Days sale. Even if you don’t shop at Publix, this is an awesome tasty and yet thrifty recipe that you might enjoy trying out. If you do shop at Publix, you should be able to purchase the ingredients to this recipe for roughly $1.05 out of pocket. Yes – you read that right! (**If you shop at a Publix is a bit “stricter” with the Italian Days coupons then you should pay approximately $2.05 out of pocket.) And, this is a healthy recipe which makes me even happier! Below is the recipe along with some of the pictures I took while making it!
Black Bean Soup Recipe
Extra Virgin Olive Oil
1 Large Onion
1 Minced Clove Garlic (or garlic powder)
2 Cans Progresso Black Beans, undrained
1 Can Black Beans – drained and then pureed
1 Can Progresso Hearty Tomato Soup
1/4-1/2 tsp Cumin to taste
Salt & Pepper to taste
Variations: Add 1 Can of Drained Diced or Stewed Tomatoes or 1 Can of Drained Corn or Both!
Finely chop your onion. Saute onion in olive oil in large stockpot until translucent. (If you don’t have olive oil, you can use vegetable oil. I prefer EVOO for sauting because of the flavor and it is also healthier for you.)
Add garlic to sauteed onions. (I prefer fresh garlic but if you only have garlic powder, that will work too.) Puree one drained can of Black Beans (you don’t have to be fancy – you can use a food processor or you can just use a fork and start mashing ;)) Add 2 cans undrained black beans, pureed can, and can of soup. Add seasoning – I prefer my food spicy so I added hot pepper and crushed red pepper. But, you will have plenty of flavor just using salt and pepper. Simmer at least 15 min. This should make approximately 6 servings. Serve with fresh bread.
Math:
I am assuming you have the seasonings (salt, pepper, cumin, etc), an onion and EVOO. (If you cook a lot, you should always have an ample supply of onions and EVOO.) BUT, if you don’t have Extra Virgin Olive Oil, it is on sale BOGO this week at Publix. With the sale and coupons you can score two 16.9 oz bottles of Crisco 100% Extra Virgin Olive Oil for $2.25 each. Also – if you decide to use the optional Diced or Stewed Tomatoes and/or the Canned Corn both of these ingredients are on sale this week at Publix!
3 Cans Progresso Black Beans – with sale and coupons $0.17 each
1 Can Progresso Hearty Tomato Soup – with sale and coupons $0.39 each
1 Can Green Giant Corn Low Sodium – with sale and coupons $0.15 each
Slices of Fresh Bread – purchased from Publix bakery after buying 6 Hunts products – with coupon – FREE
Total Cost for Ingredients: $1.05
Assuming the soup makes 6 servings, Total cost per serving: $0.18 per bowl of soup.

Personally, I would splurge on a little chorizo sausage and cook that first and use the rendered fat to saute the veggies (major flavor boost!). Also, you can add a pinch of red pepper flakes to kick up the heat!
