I have a yummy, healthy giveaway for 10 Addicted to Saving readers!  Ten of you will win one $5.00 off Driscoll’s Product coupon.  These coupons don’t expire until 12/31/12!  Many of you may know this already, but Driscoll’s berries have limited edition berries called “Season’s Finest” berries.  These berries are sweeter, larger and brighter than other berries and the reason is because nature provided the perfect conditions to grow the season’s finest berries!  Go HERE to “like” Driscoll’s Berries on Facebook and keep in the loop on promotions, recipes and more!  Season’s Finest berries are only available in stores until approximately mid-April so I will make sure that all of you who win these coupons will receive your coupons before the end of next week!

Driscoll’s sent me quite a few recipes to try with the berries as well and my favorite recipe out of their options is Strawberry Caprese Salad (pictured above)!  If you are interested in making this yummy salad, below is the recipe:

Strawberry Caprese Pasta Salad
Prep time: 20 minutes
Makes: 4-6 servings

8 ounces Driscoll’s Strawberries
8 ounces shell pasta, cooked, rinsed and cooled
8 ounces fresh mozzarella balls, drained
1/4 cup slivered fresh basil
1/4 cup slivered red onion
1/4  cup prepared balsamic vinaigrette

Rinse, hull and quarter strawberries.
Combine strawberries, pasta, mozzarella, basil and onion in a large bowl. (Can be prepared to this point and refrigerated until ready to serve.)
Drizzle with vinaigrette and mix gently until ingredients are well coated.

    I love Driscoll strawberries dipped in dark chocolate. These are the biggest and sweetest strawberries. They are only in season for a short time, but boy are they good!!

    Blueberry Barbecue Sauce..hope it’s ok to share it.

    Makes about 1 1/2 CUPS
    Ingredients
    2 teaspoons vegetable oil
    1/4 cup minced onion
    1 tablespoon minced fresh jalapeño chile, seeded
    1/4 cup ketchup
    1/4 cup rice wine vinegar
    3 tablespoons light brown sugar
    3 tablespoons Dijon mustard
    1 teaspoon hot sauce or to taste (I used Cholula hot sauce)
    2 cups fresh or frozen blueberries
    Salt and freshly ground pepper

    Directions
    Heat the oil in a nonreactive saucepan. Add the onion and jalapeño and cook over moderate heat, stirring, until wilted, about 3 minutes. Add the ketchup, vinegar, sugar, mustard and hot sauce and bring to a simmer. Add the blueberries and simmer over low heat, stirring until thickened, about 10 minutes.
    Puree the sauce in a blender or food processor until smooth. Pass through a strainer and season with salt and pepper. Serve warm or at room temp.
