It’s that time of the week again! I headed to Publix this morning and was very excited about using the $4.00 off Produce Target coupon. It’s not easy to save on produce and I’m thankful that my Publix accepts Target competitor coupons! My shopping trip was pretty easy. I got lots of produce and then couldn’t help but take advantage of the awesome $2.95 Digiorno Pizza deal. I also couldn’t help but buy two boxes of Girardelli Brownie Mix – even without a coupon. I’ve been eating very little sugar since March. But I have been cheating a bit here and there.. and this brownie mix will be the perfect cheat dessert for me.

It’s been fun getting Asher excited about Father’s Day. Seeing everything through the eyes of a toddler is just so fun. We have a big day planned for daddy! It won’t be relaxing but will at least be a family filled day of fun (hopefully)!

What a week this has been! I’m happy the weekend is here! I’m planning on working a little tomorrow morning and then spending the rest of the weekend with Asher in the pool. This past week was a great one. I’m still recovering from my cold. I can’t believe my immune system is this shot. But I’m finally feeling like myself again. On Monday, we had Chris Chmura over from Fox 13 and we talked about the pros of buying bulk boneless, skinless chicken breast from Zaycon Fresh. What a week! On Tuesday night I came down with a fever and sore throat. After being up much of the night alternating between shaking from chills and sweating from being overheated, I woke Wednesday with a screaming headache and sore throat. The sore throat has now carried on and turned into a cold. I have been using my essential oils all week on both myself and my son (who unfortunately got sick too). While some of the oils have definitely helped – the peppermint helped my fever and the Digize helped my nausea, I haven’t found an oil that just perfectly erases all traces of the sinus pressure and cold I’m dealing with now. I’ve been frustrated with my immune system this past year. It’s really down. And I wouldn’t expect that when I factor in the facts that I’m going to the chiropractor, eating super clean and sugar free, taking Vitamin D twice a day and using my oils. I guess that’s life though! I’m just in a stage where I’m more run down I guess!

So all that to say that hubby was a gem and went to Publix for me tonight. We weren’t overwhelmed with excitement over this week’s ad and to be honest, we don’t need much and don’t want to spend money on food we don’t need.

This week’s shopping trip was much smaller than last week’s haul! But I did manage to spend quite a bit! And, considering I went to the store earlier in the week to stock up on more produce, my out of pocket spending on groceries this week was high. As you all know, it is expensive to eat healthy! At least I have three of the $2.00 off $10.00 Publix produce coupons. By the time tomorrow is over, I will probably have used every coupon! I loved the Hunt’s Canned Tomatoes deal as well as the Horizon Organic Mac & Cheese Deal. And while my son is 2.5, I still give him fruit & veggie pouches from time to time. So I loved getting Plum Organic Pouches for just $0.33 each!

We’ve had a great week. We are still getting adjusted to my husband’s work schedule, but it seems like every day I’m figuring it out more. And, occasionally he will have an appointment cancel so nights like last night, he actually was home to eat dinner with us. We’ve had a long week over here! Hubby has been working late hours and I’ve felt a bit like a single stay at home parent who at the same time has to work from home full time. I’m beat. For all of you who are single parents, my hat goes off to you. I do not know how you do it day in and day out!

My shopping trip today was a large one. I bought eight bags of cat food. If you’ve followed me on this blog, you know that my cat is very particular with the type of food she eats. Purina Indoor Cat Formula is the brand and flavor she likes. Since it is on sale BOGO and since there are $1.10/1 coupons, I stocked up. We could eat Mexican food every night of the week. I am trying to steer clear from processed foods so I will often use ground beef or chicken on a salad. Meanwhile, the hubby and Asher will have tacos or burritos. My out of pocket spending was higher than normal this week because I bought so much cat food as well as stocked up on all sorts of Mexican food fixins.
