Our Disney Kids Preschool Playdate Party

I was so excited when we were selected to host a #DisneyKids Preschool Playdate! My son is all about Disney – right now his favorite movies are Cars and also Cars Toons: Mater’s Tall Tales. So when I told him that Disney was sending us a box filled with goodies, he was SO EXCITED.

Disney sent us a 17 pound box filled with fun surprises from each of the four Walt Disney World Resort theme parks! (Scroll to the bottom of this post to watch my son open our box!) And they sent more than I ever would have imagined. The box was filled with Disney party supplies, party favors, fun game ideas and an awesome Sofia the First suitcase. You might think that my son wouldn’t like the suitcase, but he LOVES it. I’ve tried to tell him that the suitcase is for when we go on trips….. but right now, he is enjoying filling it up and walking all around our house with it. And, when he goes to Grandma’s house (she lives 5 minutes away), he brings his suitcase. It’s quite adorable.

I want to tell you that we threw a HUGE party for all of my son’s preschool aged friends. But in actuality, we had a small get-together with friends. This has been a rough winter for us. I have been sick pretty much every day since Christmas. And with the craziness of trying to get ready to adopt in a little over a month, life is hectic! So we had just a few friends over and had a fun, laid back time.

To go along with my “laid back” theme, I decided I was going to make Mickey Mouse cookies. Originally, I was going to make sugar cookies from scratch and decorate them with different colored icing. BUT, my hubby was out of town all week and I was left parenting full time and working full time. So I had to find an easier option. Using my Mickey Mouse Cookie Cutters that I ordered on Amazon and store bought Triple Chip Cookie Dough (that was on sale BOGO), I was able to make these adorable cookies! To make the cookies, I placed the cookie dough on parchment paper. I didn’t break apart the cookies because I wanted to make them into a rectangle bar. Then, I topped the cookie dough with more parchment paper and using a rolling pin, rolled the dough so that it was thinner. Then, I baked the dough according to the directions on the package. I ended up baking it a bit longer until the top turned a bit brown. Once the bar cooled, I used my cookie cutter and cut out the cutest little Triple Chip Mickey Mouse cookies.

Lunch was the same theme as the cookies. Quick and easy. I made Peanut Butter & Jelly sandwiches and made them into Mickey Mouse sandwiches by using my two trusted Mickey Mouse cookie cutters.

The sandwiches were a hit. They were the perfect size and adorable.

Decorating the table was a breeze using all of the party supplies Disney sent us. How cute does the table look! I especially loved being able to use pictures from Disney World as decorations. Below is a picture from Animal Kingdom as well as all of the fun Animal Kingdom animals that we received. The animals were a hit – all of the kiddos wanted to play with them!

The kids also loved the Disney hats. One side had a Princess Sophia crown and the other side had a Jake and the Neverland Pirates hat.

And then let’s be honest, the kids of course loved drinking their Nestle Nesquik Chocolate Milk! Chocolate milk makes every preschool play date better! 🙂

After lunch, the kiddos (even the baby) decided to play us a concerto on the piano. I let them play just long enough to snap this cute picture. 😉

Then we sent them outside to burn off some steam. We were able to play a few games and then my son’s friends went home as it was naptime for everyone!

I was able to send the kiddos home with some fun goodies like a Lion King poster, tattoos, and more. My favorite memento from our Disney Kids Preschool Playdate Party was the HP Photo Booth Strips I printed out. How cute did these pictures come out!

We had a great time at our Disney Kids Preschool Playdate Party! My son is already asking when Disney will send him another box so that he can have another party (he wants a bigger one next time)!

Crustless Quiche with Bacon & Asparagus Recipe

One of my most popular recipes on the blog is my Crustless Veggie Quiche Recipe. I make this quiche at least a couple of times a month. It is so good and so versatile. The one food I haven’t tried in my quiche is bacon and I just knew it would make an amazing addition.

Once I got home with my bacon, I opened my fridge to see what fresh produce I had. (That’s why I love this recipe so much – you can use whatever veggies you like!) I decided to use asparagus. This Crustless Quiche with Bacon & Asparagus Recipe calls for just a few ingredients. There are two main components to this recipe: the sauteed component and the wet ingredients. The wet ingredients include baking mix. For this, it can be any baking mix that you typically use. I’ve used both gluten free mixes and regular mixes. We like Heart Smart Bisquick and also Pamela’s Baking and Pancake Mix. Do not, however, use a mix that is strictly for pancake and waffles. That will be too sweet.

To prepare the quiche, first I browned the bacon. I wanted to get the bacon nice and crispy. While the bacon was browning, I mixed the wet ingredients together. Then, once the bacon was cooked the way I like, I drained it and placed the bacon on paper towels and then chopped the bacon into bite sized pieces. Using the same pan, I then sauteed the asparagus, peppers and onions and added the chopped bacon to them.

The bottom layer of the quiche is the sauteed asparagus, onions, peppers and bacon. Then, spread the shredded cheese over it. And lastly, pour the wet ingredients on top. Bake for 35-40 minutes and then voila! Your Crustless Quiche with Bacon & Asparagus will be done!

Crustless Quiche with Bacon & Asparagus Recipe

Ingredients

1/2 package of Bacon (we like Wright® Brand Bacon)
1/2 lb of Asparagus, cut into bite sized pieces
1/2 Large Onion Diced
1/2 Large Pepper Diced
3/4 Cup Baking Mix
1 1/2 Cup Milk (I’ve used skim and 1% milk with great results)
3 Eggs (I’ve also used 1 egg and 4 egg whites with great results)
1/2 cup Cheddar, Swiss or Mexican Blend cheese (I’ve used shredded and block cheese)
1/2 teaspoon Salt
1/2 teaspoon Pepper
1/4 teaspoon Crushed Red Pepper (if you like your food spicy)

**other optional ingredients, spinach, asparagus, pepperoni, sausage, tomatoes – the list goes on and on!

Directions

1) Preheat your oven to 400 degrees. Spray a baking dish with non-stick cooking spray
2) In a frying pan, cook the bacon to the consistency you like. I like crispy.
3) Once bacon is cooked, remove bacon from pan and place on paper towels. Drain oil from pan leaving just a tablespoon in pan.
4) In the same pan, saute all vegetables until veggies are soft. Add bacon to veggies and mix.
5) In a mixing bowl, whisk baking blend, milk, eggs, salt, pepper and crushed red pepper
6) In your casserole dish, spoon bacon & sauteed vegetables and cover the bottom.
7) Layer shredded cheese on top of the meat & veggies.
8) Pour whisked egg & milk mixture onto the top of the cheese.
9) Bake for 35-40 minutes until a nice comes out clean.
Serve and enjoy!

Most of you know that we adopted our son when he was 10 months old. When he first came home, I had only the bare necessities and yet I didn’t have one of the most important baby supplies… a baby monitor. After that first night as parents, hubby and I immediately ordered a baby monitor and fast forward to now, we still use a monitor in my son’s room. (He’s now 3.)

We set up our two Astra 2 Cameras in my son’s room. One camera is on the wall in front of his crib (so that we can watch him sleep) and the second camera is on my son’s bookshelf (so that we can watch my son if he is playing in his room). It took us less than 5 minutes to install the cameras and test out the video monitor. The video monitor has a 3.5” screen which is a great size! The cameras pan left and right, tilt and zoom. The cameras also have a Talk to Baby intercom which lets you communicate with your child directly from your video monitor. And this is one of my favorite features – the battery life is up to 48 hours when you have your monitor in power save mode!

As a full-time blogger, and mom (to a busy 3 year old), I struggle with working and parenting at the same time. Honestly, it just doesn’t happen much unless my son is sitting to watch Daniel Tiger or Thomas the Train. I love that with this camera and monitor, I am able to peek and check on my son if he does go to play in his room. I don’t like him to be out of my sight (at the age of 3, he loves to get into stuff he shouldn’t) so this system allows me to get a few minutes of work done while at the same time watching his every move. 🙂 When I did research on this camera and monitor, I learned that it has ClearVu digital wireless technology which means they are secure against hackers. This is important to me as I’ve heard horror stories about video monitor systems being hacked into.

Below is a quick video I took watching my son load his stuffed animals back into his crib… AFTER I had emptied his crib of most of his stuffed animals!

Nintendo’s Mario & Luigi: Paper Jam Review

I was SO excited when I became a Nintendo Blogger this year. While my son is still young, my hubby and I know that very soon he will be of the age where all of his friends are playing video games. And hubby and I want to get a jump start on the process so that we know what platforms and games are out there as well as what games we feel comfortable with him playing. AND, hubby and I are trying to have more “well-rounded” lives this year. Our past couple of years have consisted of lots of work, lots of parenting a toddler and no downtime. Playing Mario & Luigi Paper Jam is the perfect way to unwind!

When I was given the opportunity to review Mario & Luigi Paper Jam for Nintendo 3DS, I jumped at it. We have a 2DS and this game works on that platform as well. The first thing I had to do was unbox our 2DS, charge the battery and set the settings on it. Once I did that, I inserted the game and got started!

Game card is inserted and I’m ready to play! Immediately after starting the game I noticed that the music is enjoyable to listen to, peppy and just what you would want for a Mario & Luigi game!

One of the things I noticed right away is that there are lots of dialogue among the characters. And I loved this. Here’s why. As the characters are talking, you are learning more about their personalities as well as relationships. The dialogue sets the stage for the story that you are taking part of. And, when my son is playing video games, I want him to learn along with play. This game will reinforce his reading skills as he’s able to read the conversations, tips and tricks that are displayed on the screen.

As you go through the levels, one screen will show the game you are playing (saving the Paper Toads, fighting the and a second screen shows the map of where you are in the kingdom at all times.

What I found is that this game is not too hard and yet not too easy. It is challenging and perfect for game players of all ages. It’s family friendly, encourages reading, encourages fun and is a great way to unwind after a long day of work or school!

Better Bakery Artisan Melts & Corn Salad Recipe

I wanted to use the corn to make an easy corn salad to accompany our Artisan Melts.

You can either microwave or bake these sandwiches. I chose to use my oven. Once your oven is preheated, it takes only 22 minutes to cook your sandwich! During the time it took cook the sandwiches, I made my Corn Salad.

The thing with me is I am busy. So when I cook, I have to be intentional about maximizing my time. This Corn Salad Recipe is one I’ve made countless times. I switch it up all of the time using different flavored vinegar, adding other veggies and sometimes adding sweetness like honey or even white sugar. It always comes out good. It really just depends on what fresh ingredients I have in my fridge. Today’s Corn Salad I made with red pepper and cilantro. YUM.

Corn Salad Recipe

Ingredients

2 cups Corn (if using frozen corn, thaw under running water)
½ Red Pepper (chopped)
2 T Chopped Red Onion
1 T Cilantro
2 t Extra Virgin Olive Oil
1 t Red Wine Vinegar
Salt & Pepper
Avocado (if desired)

Instructions

1) Chop red pepper, red onion and cilantro.
2) In a large bowl, mix corn, red pepper and red onion.
3) Add olive oil, vinegar, salt & pepper. Stir.
4) Add cilantro. Stir gently.
5) If your family likes avocado, you can also chop avocado and add to this salad or top as a garnish.
6) Enjoy!

Are you a camper? I am not. I’ve camped a few times in my life and have not had enjoyable experiences any of those times… until now. Have you tried “glamping”? Glamping is another word for glamorous camping. I decided to try my hand at glamping and see if I had a better time spending time outside glamorously than the normal camping experiences I’ve endured.

It was… fun! It was a lot of work to set up. I’m not going to lie. And I am not going to lie and tell you we went somewhere exotic to for our glamping experience. We did not. Having a three year old who is very very active and who also only sleeps good in his own bed, we decided to create our glamping experience right in our front yard. That way, I had running water, electricity AND indoor plumbing. Wink wink. Oh – and my three year old could sleep in his own room!

I headed to Walmart and bought some of the glamping supplies we needed including Honey Maid Graham Crackers and Freschetta® Brick Oven.

We set up our tent and got to work making it more glamourous. I brought out one of my favorite white leopard print blankets. It is SO soft and so luxurious, I knew that sleeping on an air mattress plus being
