My son started preschool last week. This is his first time going to school and I’m going to admit, I was a nervous wreck on his first day and I’m still a nervous wreck even now. (And, he’s only going two mornings a week! What am I going to be like once he’s in school 5 days a week – eek!) He has lunch at school and I’ve been having a fun time putting together his lunches. The only tricky thing for me is that he is on a special diet. A lot of regular lunch items (bread, pouches, crackers, cookies, yogurts) have to be very specific brands. (We are following the Feingold Diet.) We are only a couple of weeks into it and I am by no means an expert but I have found some easy foods that my son likes AND they are so tasty he doesn’t even realize he’s on a special meal plan. Win!

I headed to my local Save-A-Lot (in northern Tampa Bay) armed with my Feingold food lists. Head HERE to find the closest store near you. The two things I’ve noticed since following a special diet is that 1) many of the “allowed” food brands are expensive and 2) my son is particular on what he eats. My goal in his school lunches is to give him food I will know he will eat and yet doesn’t break the bank.
At Save-A-Lot I stocked up on pantry staples that I can use for school lunches and also dinner. (Prices may vary at your local store.) I decided to send my son to school with cheese quesadillas, rice and beans, fresh kiwi and fresh banana. (I WISH I could send him to school with veggies but unfortunately, he is in a stage where he doesn’t like and vegetables at all. Thank goodness we can sneak them in smoothies!) I already had tortillas and cheese at home but while at Save-A-Lot I bought the fruit, rice and beans.
Once home I made enough food for my daughter’s lunch and my son’s school lunch. If you have never made quesadillas, they are so easy to make. In fact, I basically copy the steps of making a grilled cheese. My son isn’t into fancy quesadilla flavors so I kept them simple and just made cheese. However, if your child is more adventurous, you could very easily put leftover chicken, beef and even veggies into your quesadilla!
Once I cooked the quesadilla, I let it cool before cutting. I then cut it into triangles and placed the wedges into a container. I then put the rice and beans into a separate container and the cut kiwi into another container.
This school lunch was a hit! And as you can see from the picture below, my daughter loved it too!

I’ve never actually been to Save-A-Lot, there is one close by but I have never gone in, after all the positive posts and this review though I may have to check it out. Glad they have lots of fresh veggies and produce that’s what I would be getting there along with staples like rice etc.
